Doña Pepa's Nougat / Turrón de Doña Pepa


Ingredients:
(serves 8 - 12)

4 1/4 cups self-rising flour.
2 cups softened vegetable shortening (1/2 of this can be margarine).
1 tbsp salt.
5 eggs, lightly beaten.
3 tbsp sugar.
1 tbsp toasted, ground sesame seeds.
2 tbsp toasted, ground, aniseed.
2 tbsp colored candy sprinkles.

For the fruit syrup:

1 lb fresh peaches or apricots.
1/4 lb dried figs.
1 lb apples.
1 lb oranges.
2 quinces.
1/2 small pineapple.
1 banana.
1 key lime.
7 cups sugar.

Preparation:

Preheat oven to 275ºF. Grease and flour two large cookie sheets. Sift the flour and salt on to a work surface and make a large well in the center. Into the well, add the eggs, sugar, softened shortening, sesame seeds and aniseed. With your hands bring dry ingredients into the center and icorporate all ingredients, working the mixture into a smooth dough. Break off the dough into small portions and roll each portion into sticks about 12 in long and the diameter of a small cigar.
Place the sticks on cookie sheets, leaving about 1 cm between each as they will expand a little on cooking. Bake on the middle rack of the oven until barely golden, about 10 - 15 minutes; be careful because they will burn easily. Remove from the oven and set aside to cool.

To make the fruit syrup:

Wash the fruit well, leave the skins on (except for the banana) and chop coarsely. Place in a large pan with enough water to cover them well, about 8 liters. Bring to a boil, reduce the heat and simmer until the liquid has reduced by half and the fruit has begun to break down, about 20 minutes. Remove from the heat and let cool for a while before straining. You should be left with about 2 liters of fruit juice.
Combine the fruit juice with the sugar in a pan and cook over very low heat for about 2 hours or until it starts to bubble halfway up the pan, 240ºF on candy thermometer. Remove from the heat and let cool for 15 to 20 minutes.

To assemble the turron:

Line the bottom of a shallow 12 x 8 in dish or platter with wax paper. Place the cookie sticks in even rows touching each other to line the base of the dish, breaking them off to fit the dish if necessary. Any broken pieces can be crumbled, spread on top and lightly pressed down. Spoon some of the syrup over the pastry, making sure it is well coated. Arrange another layer of sticks crosswise over the first layer. Coat well again with syrup and add another layer of sticks again crosswise over the previous layer. Be sure that the sticks are packed tightly together. Spoon the remaining syrup over the entire stack to coat well. Decorate with colored sprinkles and leave for several hours to 'set' before removing from the dish.




Ingredientes:
(8 a 12 personas)

4 1/4 tazas de harina preparada.
2 tazas de manteca vegetal (1/2 taza puede ser de margarina).
1 cucharada de sal.
5 huevos, ligeramente batidos.
3 cucharadas de azúcar.
1 cucharada de semillas de ajonjoli tostadas.
2 cucharadas de anís molido tostado.
2 cucharadas de confites de colores.

Para la miel:

1/2 kg de duraznos frescos o albaricoques.
100 g de higos secos.
1/2 kg de manzana.
1/2 kg de naranja.
2 membrillos.
1/2 piña pequeña.
1 plátano.
1 limón.
7 tazas de azúcar.

Preparación:

Precaliente el horno a 135ºC. Engrasar y enharinar dos moldes grandes para galletas. Tamizar la harina y la sal en una superficie de trabajo y hacer un hueco grande en el centro. En el pozo, añadir los huevos, el azúcar, la manteca ablandada, las semillas de ajonjolí y el anís. Con las manos llevar los ingredientes secos desde afuera hacia el centro e incorporar los ingredientes trabajando la mezcla hasta obtener una masa suave. Romper la masa en pequeñas porciones y rodar cada porción hasta obtener palos de 30.5 cm de largo y el diámetro de un pequeño cigarro.
Coloque los palos en las bandejas para hornear, dejando aproximadamente 1 cm entre cada uno, ya que se ampliará un poco en la cocción. Hornee en el estante medio del horno hasta que estén apenas doradas, unos 10 - 15 minutos, teniendo cuidado porque se quema fácilmente. Retirar del horno y dejar enfriar.

Para hacer la miel:

Lave bien las frutas, quite las cáscaras (excepto la del plátano) y córtelas en trozos grandes. Colóquelas en una cacerola grande con agua suficiente para cubrirlas, alrededor de 8 litros. Llevar a ebullición, reduzca el fuego y cocine a fuego lento hasta que el líquido se haya reducido a la mitad y la fruta se empiece a romper, alrededor de 20 minutos. Retirar del fuego y dejar enfriar por un tiempo antes de colar. Le quedará alrededor de 2 litros de jugo de fruta.
Mezcle el jugo de frutas con el azúcar en una cacerola y cocinar a fuego muy lento durante 2 horas o hasta que empiece a hervir la mitad de la olla, 117ºC con termómetro de dulces. Retirar del fuego y dejar enfriar durante 15 a 20 minutos.

Para armar el turrón:

Cubra el fondo de una bandeja o plato con papel encerado de 30 x 20 cm. Coloque luego los palitos alineándolos a la base uno junto al otro, de ser necesario rompiéndolos para adaptar a la forma de la fuente. Las piezas rotas pueden ser desmenuzadas, y esparcidas encima. Con una cuchara agregue miel sobre la masa, y asegúrese que quede bien cubierta. Colocar en cruz otra capa de palitos sobre la primera. Cubrir nuevamente con miel y añadir en cruz otra capa de palitos sobre la capa anterior. Asegúrese de que los palitos queden firmemente juntos. Vierta la miel restante hasta cubrir bien la pila entera. Decorar con confites de colores y dejar varias horas antes de retirar del plato.
